Apple Crumble cake with whiskey custard
A beautiful apple cake, made with less effort, perfect treat this autumn or honestly anytime of the year. It has a delicious crumble topping, serve with silky smooth custard and it is a luscious dessert. Even makes a great showstopper for your next event or festivities too.
I baked this cake few years ago and only managed to write it down now! I feel like my blog has been left unattended for many many years now, well life happened. New baby, new house, new city, so many personal changes and then came the big change in the social media industry.. The Reels and Tik Tok. Everyone only wanted quick fast paced short videos and no one actually has the time to read blogs anymore.
But, few days ago I got this heartwarming, lovely and touching message from one of my followers from many years, that actually bought me back here. Just as I was wondering why would anyone even read my blog or recreate my recipes, she said that one of my recipes has become their family favourite and that her teenage son asks that particular recipe on his birthday every year. This seriously made me all teary eyed and I felt I should do what I enjoyed doing the most even for those few people who still continue enjoying reading a blog post, or just for myself.:)
Now I wanted to say a big THANK YOU! to all you wonderful people who take time and read my blog and try my recipes, I will not keep you waiting for long. I have a long list of recipes still waiting to be shared here, trust me you won't be disappointed and Thank you for hanging in there with me.
Back to this cake.. It is very easy cake to make, no major instructions, so simple that you can bake it with your kids too.
You can skip the whiskey in the custard if you do not want to use it, tastes just as great without it too. Or you can even serve it with a scoop of vanilla ice cream because why not?
You can use any kind of apples for this recipe, I have used Pink Lady apples, any cooking apples works just perfect.

- 4 cooking apples, peeled, cored and cut into small chunks
- 113 grams unsalted butter room temperature
- 100 grams castor sugar
- 45 ml milk
- 150 grams plain flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- Icing sugar for dusting
- 90 grams plain flour
- 25 grams oats
- 80 grams cold unsalted butter
- 90 grams castor sugar
- 1 vanilla pod
- 600 ml milk
- 4 large egg yolks
- 2 tbsp caster sugar
- 1 tbsp cornflour
- 1 shot whiskey
For the cake -
For the crumble topping
For the custard-
- Pre heat the oven to 180 degree Celsius, line and butter a 9 inch spring form tin and set aside.
- To make the custard - slit the vanilla pod and remove the seeds, add the seeds and the pods into a saucepan and add the milk, bring to boil. Remove from the heat & let it cook, and take out the vanilla pods, In a separate large bowl whisk together egg yolks, sugar and cornflour until pale colour. Slowly add the warm milk, little by little continuous whisking while adding the milk. Add the mixture back to the saucepan and cook on low heat for about 15 to 20 mins until it’s thick while continuously whisking. Once cooled down add the shot of whiskey and mix well. Refrigerator until use.
- For the crumble topping - in another bowl add the ingredients under crumble topping, use a hand blender and mix the ingredients into a crumble. Or use your hands and mix everything well together until it reaches a corse consistency. Keep in the fridge until needed.
- To make the cake - Beat the butter until light and fluffy for 5 mins, then add the sugar and continue whisking using a hand mixer or by hand for 3 to 4 mins until creamy. Add the eggs one at at time and continue whisking. Until smooth.
- In a separate bowl sift the flour, baking powder, ground cinnamon and salt.
- Gently fold the dry ingredients into the wet ingredients, add the milk and mix well. Do not over beat.
- Spread the batter into the cake pan and add the chopped apples all over the batter. Then top with the crumble mixture.
- Bake in preheated oven for about 45 to 50 mins until a skewer inserted comes out clean. Cool on a wire rack. Enjoy warm with whiskey vanilla custard.
