Eating lots of delicious veggies is the key to a lot of natural vitamins and minerals. All these dishes are made in many popular chinese restaurants and takeaway in all major cities in India. Normally it doesn't have noodles in it, but since we were having this for lunch I wanted it to be a bit more filling. You can however skip the noodles and make this as just a mixed veggies soup. </span></span></span></span></span></span>You can use any type of noodles you have at home, I have used the ramen noodles from the instant pack, any kind of noodles work well too. The taste is something else and I made this soup using all those veggies and it was so so delicious. Season with salt and pepper.</li> <li>Add the soya sauce, vinegar and the cornflour slurry, give it a good mix. You will notice the soup with thicken.</li> <li>Cook the noodles seperately accoring to package instructions, add it to th bowls that you will be serving the soup in. </li> <li>Remove from the heat, top the soup on the noodles and garnish with finely chopped scallions and sesame seeds. A simple few ingredients put together into a food processor and it’s done. Most of the ingredients are probably in your kitchen cupboard already. I have used black cocoa powder for this recipe, if you do not have it handy you can always use black food colour. </p> <p><img alt="Bat halloween cookies" data-entity-type="file" data-entity-uuid="a8205d62-f96a-4828-b021-79ae8bfec4ee" src="/sites/default/files/inline-images/4_18.jpg" /></p> <p>My husband’s reaction to these cookies, he said ‘these cookies are like Oreos but even better and they taste absolutely amazing!’They are not fully sugar free, but I did reduce the sugar and reduced butter. If you don’t have it you can add a 1/4 tsp of ground cinnamon, pinch of nutmeg, pinch of ginger and pinch of clove. Will give you a similar taste. It is one of the best things to do when you are not sure if you are going to consume that ripe fruit, freeze it and use it for smoothies or popsicles, nothing will go for waste. </p> <p><img alt="Pina colada popsicles" data-entity-type="file" data-entity-uuid="9a32909d-529f-4459-9a13-59433f169215" src="/sites/default/files/inline-images/IMG_6402.jpeg" /></p> <p dir="ltr">A healthier version of any store bought popsicles, they are made with organic honey, with no added refined sugar. I love the spices that come together in this recipe, with a hint of tanginess in it makes it so very different and simply beautiful. The traditional recipe is a bit on the spicy side, you can however alter the heat according to your taste and liking. Let it cool down a little, add water and blend into a fine paste. Get all of the ground masala out of the blender by adding a splash of water. Set aside.</li> <li>Heat ghee on high heat in a heavy bottom pan, add the marinated lamb and stir fry for just about two to three minutes, only until the lamb changes colour on the outside, do not over cook at this stage, remove from the pan and set aside.</li> <li>In the same pan, add a tbsp more ghee if needed and add the ground masala paste, add the curry leaves, cook the masala, on medium heat for a few mins until the raw smell goes away, this will take about 3 to 4 mins. Add about 2 tbsp of water if needed.</li> <li>Now add the fried lamb pieces, toss well, make sure all the masala is well coated to the lamb, now add the tamarind paste, brown sugar and salt as per taste. Taste the curry and see add more of the tamarind juice if needed as per your taste and liking.</li> <li>Cover with a lid and let the lamb cook completely for 15 to 20 mins. Ask your butcher for a diced leg of lamb, it cooks fast, the meat is really juicy and soft. This curry is delicious even the next day because then the lamb would have absorbed the spices even more. You can find all the Indian spices in any Asian Store. When the seeds begin to splutter, add the ginger and garlic paste and the grated onions. Saute for 2 to 3 mins until soft.</li> <li>Increase the heat and add the diced lamb pieces and fry over high heat for about 2 to 3 mins, reduce the heat and cover and let cook till tender for 10 mins.</li> <li>Now add the yoghurt, stir-frying continuously so that it blends well and does not curdle, this step is important otherwise the yogurt will curdle. Now cook until the oil separates, this will take about 5 to 8 mins.</li> <li>Now add the spices - garam masala, salt, turmeric, coriander and chilli powder or paprika. Continue cooking on high heat and add the green chillies and sliced onions. Mix everything well until all the spices and the lamb is coated with the spices.</li> <li>Reduce the heat to medium and continue cooking for about 5 to 8 mins until the fat sererates. I had no patience to use many bowls and clean up later no no! Using a wire whisk mix everything well.</li> <li>Beat the eggs in a bowl and add them to the mixture, add the oil, milk and instant coffee granules. Give it all a good mix.</li> <li>Last add the boiling water, mix everything well, using a spatula, do not over mix. Add the chocolate chips mix well. Sprinkle more chocolate chips on top and bake in the pre-heated oven for about 30 to 35 mins until a skewer comes out clean. Keep an eye out for cake, each oven time and temperature may vary. Let it cool completely on a wire rack, before cutting. Heat the ghee or oil on medium high flame in a heavy-based pan or a non stick pan, add the cumin seeds, cloves, cinnamon, peppercorn, cardamom and bay leaves. Fry for a few mins until the seeds start to splutter, add the ginger and garlic paste and onions, and continue to fry till the oil separates, for about 3 to 4 mins, do not burn.</p> <p>2. Add the chopped tomatoes,coriander powder, turmeric and chilli powder and salt. Continue to fry till fat separates, for about 3 to 4 mins on medium flame.</p> <p>3. Now increase heat to high and add the mince and the peas. Continue to fry for about 4 to 5 mins until the mince looks cooked (brown), then lower heat and sauté till cooked and fat separates once again.</p> <p>4. Serve warm and garnished with chopped coriander leaves. This recipe is so simple but so so delicious and I have skipped the wine so even kids can enjoy this. I have used mixed mushrooms and it turned out so good. I had homemade chicken stock at home and the taste was amazing. Then add the garlic and sauté for another 30 seconds, make sure you don’t burn the onion and garlic.</li> <li>Add the mushrooms and fry for two to three minutes.</li> <li>Then add the rice and mix well, make sure the rice is well coated.</li> <li>Now add just 1/4 cup of the stock and reduce the heat to low, stir gently. Once the stock is absorbed add another 1/4 cup. Add the 1/4 cup grated Parmesan and mix well.</li> <li>Keep adding the stock only 1/4 cup at a time and continue stirring. Season with salt and pepper as per your taste.</li> <li>This might take about 20 mins or so, the rice will begin to look creamy, when the rice is cooked aldente.</li> <li>Serve warm with more grated Parmesan. A crispy puff pastry base with creamy ricotta cheese and spinach topping with tossed pine nuts was like a bomb of delicate flavours. </p> <p><img alt="Spinach and ricotta tart with pine nuts" data-entity-type="file" data-entity-uuid="c6477f7e-4bee-4902-a2ed-c462b0287129" src="/sites/default/files/inline-images/IMG_5178.JPG" /></p> <p dir="ltr">With the current pandemic situation I am thinking of easy ways to use up any ingredients that are left over in the fridge or freeze. One such simple recipe is this. I had ordered puff pastry and was wondering what am I supposed to do with it and this was a brilliant idea. </p> <p><img alt="Spinach and ricotta tart with pine nuts" data-entity-type="file" data-entity-uuid="507a146f-c793-4963-b5ba-3f8083ed412d" src="/sites/default/files/inline-images/IMG_5175_1.JPG" /></p> <p dir="ltr">I like the fact that this was such a simple recipe and wasnt time consuming at all, you can put it together in less than 15 mins and bake it for 20 mins or so and a delicious light dinner or light lunch is ready. </p> <p><img alt="Spinach and ricotta tart with pine nuts" data-entity-type="file" data-entity-uuid="e125a56e-5913-4f15-a997-b9f070571db3" src="/sites/default/files/inline-images/IMG_5180.JPG" /></p> <p dir="ltr">I kept this recipe as simple as possible to retain it’s natural flavours and taste. I would recommend using good quality ingredients so you can taste how fresh and tasty even a simple veggie like spinach can be without much added spices. Top with any cream cheese, tomato sauce, any leftover veggies from the fridge and you have a great dish. Now add the spinach and saute until wilted, about 3 to 4 mins, season with salt and pepper.  Set aside to cool down a little.</p> </li> <li dir="ltr"> <p dir="ltr">Spread the pastry sheet on the prepared baking tray, spread the ricotta evenly using the back of a spoon, then the cooled spinach mixture on top of it. But make sure you leave about an inch all around the sides of the pastry. </p> </li> <li dir="ltr"> <p dir="ltr">Toss the pine nuts in a nonstick pan without any oil until they begin to brown a little and you can smell the aroma, do not burn them.</p> </li> <li dir="ltr"> <p dir="ltr">Sprinkle the pine nuts all over the pastry, lightly brush the egg mixture or milk mixture on all the sides of the puff pastry. This will help the pastry brown while baking. </p> </li> <li dir="ltr"> <p dir="ltr">Bake in the pre-heated oven for 15 to 20 mins, until the sides of the pastry are crisp and brown. Each oven temperature and heat may vary so keep an eye. One such popsicle I made a few days ago was super tasty and creamy mango popsicles.</p> <p><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="e73debc0-f05b-4cee-8789-5bc3e0dc3875" src="/sites/default/files/inline-images/IMG_5220_0.JPG" /></p> <p>A simple recipe to make with kids to keep them occupied, my little boy enjoyed it. :)</p> <p><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="fa14a0f3-9ec4-45eb-b003-a8bd3fca4d0a" src="/sites/default/files/inline-images/IMG_5236.JPG" /></p> <p dir="ltr">With the current pandemic situation I usually shop online and avoid doing trips to the shop, so this way I ordered few bit for my Indian cooking from an Asian store, one product was mango puree and since they did not have small tinned mango puree they sent almost a kilogram of it, I didn't exactly know what to do with so much of sweet mango puree, hence this popsicle recipe came up. </p> <p dir="ltr"><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="38eed760-d27c-4260-997e-26c87fafbcc0" src="/sites/default/files/inline-images/IMG_5223.JPG" /></p> <p dir="ltr">This is not a 100 percent healthy recipe, the tinned mango puree already contained sugar in it, when I normally make popsicles at home I use honey or maple syrup to sweeten it. But when I tried this popsicle it was so tasty I had to share it with you all. </p> <p dir="ltr"><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="18203e4c-5518-47b3-b544-d23c4e8f9991" src="/sites/default/files/inline-images/IMG_5237.JPG" /></p> <p dir="ltr">So basically this is a two ingredient recipe (minus the sugar already in the puree) all you need is natural or greek yogurt and any pureed fruit. I love love love mangoes so I enjoyed this so much, if you can't find mango then you can also try with any other fruit puree will taste just as great. </p> <p dir="ltr"><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="b2030971-a37a-47b4-bf4c-41e89a4f7e42" src="/sites/default/files/inline-images/IMG_5221.JPG" /></p> <p dir="ltr">If you have any tinned fruit sitting in your pantry and have no idea what to do with it, this would be a fantastic idea to make use of it. If you could get your butcher to de-skin your chicken then you will not have to worry about removing the skin from an entire chicken, but if I can do it I’m sure you can too.</li> <li>Marination - The more time the chicken stays marinated the more tender and juicy the meat. It’s better if you can marinated the chicken overnight, so you have it ready for the next day. If not it has to be marinated for an hour at least.</li> <li>Grilling or BBQ - If you are making this in the oven it takes about an hour to 1.15 mins, but why making it on a BBQ it will be done in few mins, so keep an eye on it. Also each oven temperature varies.</li> <li>Spices - Always make sure you have good quality of Indian spices, preferably bought from an Asian store. Taste the marination and see if you would like to adjust the heat or tanginess according to your taste buds.</li> <li>Apply the marination mixture to the chicken, make few deep slits on the breast and thighs, rub it all over, cover and keep refrigerated overnight or at least for an hour.</li> <li>When ready to grill, pre-heat the oven to 180 degrees Celsius in grill mode. Transfer the chicken to a baking tray add some of the marination that’s left in the bowl on the chicken, make sure it’s cover all over. Bake in the center rack of oven for about an hour (keep an eye), remove every 20 mind or so and drizzle melted butter or ghee all over and contribute grilling. Putting it directly on the flesh of the chicken made sure we could taste the flavours through the entire chicken. I barbecued the whole chicken with indirect heat and kept the skin separately and some extra marinade to crisp up at the end! The chickpea added great texture. How did it gain popularity?</p> <p>A South Korean actor visited an eatery in Macau where he was served a similar beverage, which reminded him of "DALGONA" a type of Korean honeycomb toffee, who later presented in in Korean TV show under the hashtag #dalgonacoffeechallange then the homemade versions of this coffee started to emerge on South Korea's Youtube channels then went viral in Tik Tok ;)</p> <p><img alt="Dalgona Coffee" data-entity-type="file" data-entity-uuid="68390318-4ed6-41bd-9d21-478fd9250bd9" src="/sites/default/files/inline-images/IMG_5045.JPG" /></p> <p>Few tips to remember while making this coffee, I know it’s no rocket science and I won’t make it sound like one ;) but these tips are important and they are tried and tested -</p> <ol><li>Do not use ground coffee powder, it has to be instant coffee granules, it’s only insta coffee that makes that whipped texture which ground coffee won’t.</li> <li>Use hot water this will help the instant coffee granules to dissolve.</li> <li>While drinking this coffee (in my experience) was a bit too sweet for my taste buds, since the whipped cream like coffee is with sugar and it stays on top. So the best way to enjoy this if you don’t have an extreme sweet tooth like me then keep stirring the cream into the milk every now and then while sipping this way it will blend evenly with the milk and way it won’t taste too sweet.</li> </ol><p><img alt="Dalgona Coffee" data-entity-type="file" data-entity-uuid="f4942887-537f-4823-b036-25e5f859c82b" src="/sites/default/files/inline-images/IMG_5022.JPG" /></p> <p>Love the simplicity of this recipe and how everyone can make since we have all the ingredients at home.
