Banana and peanut butter nice cream

This is the most luscious, creamy ice cream I have made and no one can tell it has bananas In it. Peanut butter is added extra deliciousness! I have been making this for years now and every single time we enjoy this.

Warmer days means cooling down foods and no better way to stay cool than eating tons of ice cream, but I wouldn’t eat too many of the store bought ones which are loaded with sugar and all so many other preservatives. When you make this at home once it will become your family favourite for sure.

A great way to use up that over ripe bananas which you forgot to use. This happens to me all the time, I buy bananas and they ripen so soon, but I never ever throw them away I always chop them in pieces and place them in a freezer safe bag and they are ready to use whenever.

This time I have sweetened it with honey, you can use maple syrup instead to make it vegan. Use any milk of choice any plant based milk will do too.

Serving suggestions is totally up to you. I have served this before even in ice cream cones, so good! I have served mine with a piece of pure honey comb and almond flakes, it was pure indugence :)

Banana and peanut butter nice cream
Prep Time: Under 15 mins - freeze for 2 to 3 hours
Servings: Serves 4
INGREDIENTS
    • 5 small or 4 medium overripe banana pieces frozen
    • 2 heaping tbsp smooth peanut butter (pure peanut butter no added salt or any other ingredients)
    • 2 to 3 tbsp milk of choice
    • 2 tbsp of pure honey or maple syrup

     

    Serving suggestions - any toasted nuts or honey combs etc get creative :)

instructions
    1. Add the frozen banana pieces, peanut butter, milk and honey into a powerful blender or food processor, blend until nice and creamy, scraping down the sides every now and then.

    2. Pour the mixture into a tin, cover with a foil and freeze for upto two to three hours, once set, remove and scoop using an ice cream scoop and serve in a bowl or in a cone. Enjoy!
