(Skip this if using powdered ginger and garlic, you can add it along with the rest of the spices)</li> <li>Add the chopped tinned tomatoes, let the tomatoes cook for about 5 mins, add all the spices, stir well and let it cook for another 2 to 3 mins.</li> <li>Open the kidney beans tin and reserve the water separately in a bowl, add the kidney beans into the pan and combine well. Cover and cook for another 2 mins.</li> <li>If the gravy has reduced, add some of the reserved water from the tin.</li> <li>Serve with cooked basmati rice, garnish with freshly chopped coriander leaves. Serve with steamed hot rice, roti or naan, that combination is absolutely amazing. Not to mention it is so easy to make. Now heat the oil or ghee in a non stick pan, fry the meatballs for about 5 minutes until nicely browned on all sides, set aside. </li> <li>In the same pan add the rest of the ghee or oil then toss in the the shallots and saute and for 3 to 5 minutes.</li> <li>Add the tomatoes and fry for about 5 mins, until soft. Add the tomato puree and spices and mix well, saute for another 2 mins.</li> <li>Add the meatballs in and mix well, add water and cover and let it simmer for about 10 mins on low heat. If the gravy becomes thick at this stage, add some more water.</li> <li>Add the cream and give everything a good mix, turn off the heat and let it simmer for a few seconds. Remove from heat immediately.</li> <li>Garnish with coriander and serve with cooked basmati rice or naan. It was after I met my hometown friend who gave me the recipe and I tried it for the first time and it was absolutely delicious! I ate not one, not two but like three of them! Not even complaining or guilty ;) My Polish husband enjoyed it too, he ate it the traditional way by hands :D</p> <p><img alt="Masala Dosa" data-entity-type="file" data-entity-uuid="65f689d3-4b38-43f4-80af-0d3c7bb4d6a8" src="/sites/default/files/inline-images/IMG_9644-2.jpg" /></p> <p>Dosa for my non-indian friends is something like pancakes, but the difference between the two is a dosa batter is fermented (without yeast) overnight. It is a mix of lentils and rice.</p> <p>In south India we enjoy our dosas in many different ways, there is plain ones, butter ones, soft ones and the crispy one and then there is Masala Dosa which is the one with potatoes stuffed inside, which I think makes it the king of all Dosas ;)</p> <p><img alt="Masala Dosa" data-entity-type="file" data-entity-uuid="c42a41c6-7c9d-433a-ad1d-1b8a091ef59d" src="/sites/default/files/inline-images/IMG_9659-2.jpg" /></p> <p>I was hesitant to even try it all this while thinking that I might not make it right, it is one such dish which for me has to be perfect otherwise it doesn’t taste like it should. But when I finally decided to give it a try and it turned out so good I have already made it few times now!</p> <p><img alt="Masala dosa" data-entity-type="file" data-entity-uuid="eae4caf5-e838-4a7b-bbde-1ff49b56cf63" src="/sites/default/files/inline-images/IMG_9669-3.jpg" /></p> <p>There are few key tip consider when making a dosa batter -</p> <ol><li>Weather conditions - in winter the batter might not rise as it is supposed to, unlike summer when the weather is warmer. So you have to keep in mind the time required for it to ferment. I got a tip from my friend who gave me the recipe, to pre-heat the oven and turn it off when it warm and to leave the batter inside the warm oven overnight so the fermentation is better during winter.</li> <li>I usually soak the rice and lentils in the morning and grind it in the evening and let it sit overnight in the kitchen and it is ready the next day.</li> <li>The quality of the rice - I use basmati rice, but it could be any other rice too. I would prefer using basmati which is easily available for me here in any supermarket.</li> <li>The pan - use a good quality non stick pan, remember the art of making dosa comes with practice. The more you do the better you get at it. So keep practicing ;)</li> <li>Use the same cup to measure all the ingredients. </li> </ol><p>Serve the dosa with any of your favourite coconut chutney. Soo delicious! Pour the mixture into a large bowl, cover and let it sit in the kitchen counter overnight for fermentation.</li> <li>To make the dosa heat few drops of ghee in a nonstick pan, take about one big laddle of the batter and pour at the center and move in circular motion and spread it around (Similar to crepes). Add a small tsp of ghee around and let it cook on medium low heat. Repeat for the rest. (See tips above on how to get the perfect batter).</li> </ol><p> </p> <p>For the potato filling - </p> <ol><li>Wash, peel and boil the potatoes, do not over boil them. set aside.</li> <li>Heat oil or ghee in a pan add the mustard seeds, black gram lentils , curry leaves and let it  sizzle and splatter. Add the onion, saute for two mins until translucent. </li> <li>Add the boiled potatoes and rest of the spices, salt and add the water, stir well. Mash the potatoes with the spatula a little (do not over mash it). Garnish with chopped fresh corriander. </li> </ol><p> </p> <p>To serve the dosa - </p> <p>Add the potato mixture about 2 tablespoons of it inside the dosa, serve with coconut chutney. I have used zero fat Greek yogurt you can use the full fat one too. Yay!! I can’t wait to be grilling so many delicious things. I have something really tasty to pimp up your regular bbq. The chicken marinated in flavourful rich Indian spices makes the chicken so juicy and moist. In India especially where I come from it’s so warm and we don’t have winter as such. When I moved to Ireland I experienced what an actual winter feels like and after you have had that freezing cold winter you welcome spring and then the beautiful summer. With that comes the picnics and barbecues.</p> <p><img alt="Tandoori Chicken Skewers" data-entity-type="file" data-entity-uuid="42cf4742-3a86-416a-93a5-8e597e87a645" src="/sites/default/files/inline-images/IMG_7277.jpg" /></p> <p>I love packing the picnic bag with all the bbq essentials and go by the lake for a full day outing, we take a small one time use bbq and it’s usually Polish sausage that we love to do. We live in an apartment so don’t really have space for a bbq at home, lucky for us there are many places in Ireland you can go and have a one.</p> <p>Some of the places where you can have a bbq are -</p> <ul><li><strong><em>Powerscourt waterfalls</em></strong> - Also a great place to visit, with the beautiful waterfall on the background it’s a lovely place for a bbq. It also has a play ground for kids and lots of space to run around and have a good time.</li> </ul><p><a href="https://powerscourt.com/waterfall">https://powerscourt.com/waterfall</a></p> <ul><li><strong><em>Malahide castle and gardens</em></strong> - We haven’t had a bbq here but when the visited the play ground they we did see so many people having a bbq there. The only thing I didn’t like was that all the smoke from the bbq was all over the play ground and was a bit too annoying us and the kids. </li> </ul><p> </p> <p><em>Few tips to consider for this recipe -</em></p> <ol><li>If using a wooden skewers make sure you pre-soak it in water for 20 to 30 mins so it doesn’t burn.</li> <li>The more time you marinate your chicken the better it will absorb all the spices.</li> <li>Each oven time and heat varies so keep an eye on it.</li> </ol><p><img alt="Tandoori Chicken Skewers" data-entity-type="file" data-entity-uuid="5fc36a14-ace6-44ae-873c-8eea992da615" src="/sites/default/files/inline-images/IMG_7286.jpg" /></p> <p>I have served this along with Lemon rice you can find the recipe <strong><em><a href="http://www.soulfulandhealthy.com/recipes/lemon-rice-chitranna">here</a> , </em></strong>you can serve this with plain basmati rice as well and with raita to cool it down. Let it marinate for at least 3 hours even better if kept overnight in the refrigerator.</li> <li>Pre-heat the oven to 200 degrees Celsius,</li> <li>if using wooden skewers soak them in water for at least 30 mins.</li> <li>Skew the chicken, peppers and onions one by one to the skewers.</li> <li>Use the grill mode if making it in the oven and grill for 30 mins. At 15 mins use a brush melted butter or ghee and turn the skewers around and grill for another 15 mins.</li> <li>If making on a barbecue, should take 15 to 20 mins. Again keep turning it around so it cooks evenly and brush melted butter or ghee every time you turn it.</li> <li>Serve as a starter with raita or maid it a meal by serving it with cooked basmati rice and plain Greek yogurt on the side.
