Peanut butter is added extra deliciousness! This happens to me all the time, I buy bananas and they ripen so soon, but I never ever throw them away I always chop them in pieces and place them in a freezer safe bag and they are ready to use whenever.</p> <p><img alt="Banana and peanut butter ice cream" data-entity-type="file" data-entity-uuid="51069b75-1be5-4af5-ad94-17125b88e12d" src="/sites/default/files/inline-images/IMG_5376.JPG" /></p> <p>This time I have sweetened it with honey, you can use maple syrup instead to make it vegan. This recipe is so simple but so so delicious and I have skipped the wine so even kids can enjoy this. What I love the most is that it is one pot cooking so therefore less cleaning.</p> <p><img alt="mushroom risotto " data-entity-type="file" data-entity-uuid="03592346-fd80-469d-b27e-7678d1de6be1" src="/sites/default/files/inline-images/IMG_5145.JPG" /></p> <p>A good quality arborio rice, mushrooms and a good vegetable or chicken stock are the key to this recipe. I have used mixed mushrooms and it turned out so good. I had homemade chicken stock at home and the taste was amazing. If you don’t have the time to make a homemade chicken stock/broth then I recommend using <a href="https://sadieskitchen.ie/products/">Sadie’s Kitchen chicken bone broth</a> (not sponsored) I just love their broth the taste is just like homemade.</p> <p><img alt="Mushroom risotto" data-entity-type="file" data-entity-uuid="f60b1b2d-64a2-44d4-a9a7-4c0fb89a2e79" src="/sites/default/files/inline-images/IMG_5165.JPG" /></p> <p>The only time consuming part for this recipe is to keep stirring the risotto and add the stock little by little, be patient the risotto will turn out yum! Then add the garlic and sauté for another 30 seconds, make sure you don’t burn the onion and garlic.</li> <li>Add the mushrooms and fry for two to three minutes.</li> <li>Then add the rice and mix well, make sure the rice is well coated.</li> <li>Now add just 1/4 cup of the stock and reduce the heat to low, stir gently. Once the stock is absorbed add another 1/4 cup. Add the 1/4 cup grated Parmesan and mix well.</li> <li>Keep adding the stock only 1/4 cup at a time and continue stirring. Season with salt and pepper as per your taste.</li> <li>This might take about 20 mins or so, the rice will begin to look creamy, when the rice is cooked aldente.</li> <li>Serve warm with more grated Parmesan. A crispy puff pastry base with creamy ricotta cheese and spinach topping with tossed pine nuts was like a bomb of delicate flavours. </p> <p><img alt="Spinach and ricotta tart with pine nuts" data-entity-type="file" data-entity-uuid="c6477f7e-4bee-4902-a2ed-c462b0287129" src="/sites/default/files/inline-images/IMG_5178.JPG" /></p> <p dir="ltr">With the current pandemic situation I am thinking of easy ways to use up any ingredients that are left over in the fridge or freeze. One such simple recipe is this. I had ordered puff pastry and was wondering what am I supposed to do with it and this was a brilliant idea. </p> <p><img alt="Spinach and ricotta tart with pine nuts" data-entity-type="file" data-entity-uuid="507a146f-c793-4963-b5ba-3f8083ed412d" src="/sites/default/files/inline-images/IMG_5175_1.JPG" /></p> <p dir="ltr">I like the fact that this was such a simple recipe and wasnt time consuming at all, you can put it together in less than 15 mins and bake it for 20 mins or so and a delicious light dinner or light lunch is ready. </p> <p><img alt="Spinach and ricotta tart with pine nuts" data-entity-type="file" data-entity-uuid="e125a56e-5913-4f15-a997-b9f070571db3" src="/sites/default/files/inline-images/IMG_5180.JPG" /></p> <p dir="ltr">I kept this recipe as simple as possible to retain it’s natural flavours and taste. I would recommend using good quality ingredients so you can taste how fresh and tasty even a simple veggie like spinach can be without much added spices. Top with any cream cheese, tomato sauce, any leftover veggies from the fridge and you have a great dish. Now add the spinach and saute until wilted, about 3 to 4 mins, season with salt and pepper.  Set aside to cool down a little.</p> </li> <li dir="ltr"> <p dir="ltr">Spread the pastry sheet on the prepared baking tray, spread the ricotta evenly using the back of a spoon, then the cooled spinach mixture on top of it. But make sure you leave about an inch all around the sides of the pastry. </p> </li> <li dir="ltr"> <p dir="ltr">Toss the pine nuts in a nonstick pan without any oil until they begin to brown a little and you can smell the aroma, do not burn them.</p> </li> <li dir="ltr"> <p dir="ltr">Sprinkle the pine nuts all over the pastry, lightly brush the egg mixture or milk mixture on all the sides of the puff pastry. This will help the pastry brown while baking. </p> </li> <li dir="ltr"> <p dir="ltr">Bake in the pre-heated oven for 15 to 20 mins, until the sides of the pastry are crisp and brown. Each oven temperature and heat may vary so keep an eye. One such popsicle I made a few days ago was super tasty and creamy mango popsicles.</p> <p><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="e73debc0-f05b-4cee-8789-5bc3e0dc3875" src="/sites/default/files/inline-images/IMG_5220_0.JPG" /></p> <p>A simple recipe to make with kids to keep them occupied, my little boy enjoyed it. :)</p> <p><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="fa14a0f3-9ec4-45eb-b003-a8bd3fca4d0a" src="/sites/default/files/inline-images/IMG_5236.JPG" /></p> <p dir="ltr">With the current pandemic situation I usually shop online and avoid doing trips to the shop, so this way I ordered few bit for my Indian cooking from an Asian store, one product was mango puree and since they did not have small tinned mango puree they sent almost a kilogram of it, I didn't exactly know what to do with so much of sweet mango puree, hence this popsicle recipe came up. </p> <p dir="ltr"><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="38eed760-d27c-4260-997e-26c87fafbcc0" src="/sites/default/files/inline-images/IMG_5223.JPG" /></p> <p dir="ltr">This is not a 100 percent healthy recipe, the tinned mango puree already contained sugar in it, when I normally make popsicles at home I use honey or maple syrup to sweeten it. But when I tried this popsicle it was so tasty I had to share it with you all. </p> <p dir="ltr"><img alt="mango popsicle" data-entity-type="file" data-entity-uuid="18203e4c-5518-47b3-b544-d23c4e8f9991" src="/sites/default/files/inline-images/IMG_5237.JPG" /></p> <p dir="ltr">So basically this is a two ingredient recipe (minus the sugar already in the puree) all you need is natural or greek yogurt and any pureed fruit. If you could get your butcher to de-skin your chicken then you will not have to worry about removing the skin from an entire chicken, but if I can do it I’m sure you can too.</li> <li>Marination - The more time the chicken stays marinated the more tender and juicy the meat. It’s better if you can marinated the chicken overnight, so you have it ready for the next day. If not it has to be marinated for an hour at least.</li> <li>Grilling or BBQ - If you are making this in the oven it takes about an hour to 1.15 mins, but why making it on a BBQ it will be done in few mins, so keep an eye on it. Also each oven temperature varies.</li> <li>Spices - Always make sure you have good quality of Indian spices, preferably bought from an Asian store. Taste the marination and see if you would like to adjust the heat or tanginess according to your taste buds.</li> <li>Apply the marination mixture to the chicken, make few deep slits on the breast and thighs, rub it all over, cover and keep refrigerated overnight or at least for an hour.</li> <li>When ready to grill, pre-heat the oven to 180 degrees Celsius in grill mode. Transfer the chicken to a baking tray add some of the marination that’s left in the bowl on the chicken, make sure it’s cover all over. Bake in the center rack of oven for about an hour (keep an eye), remove every 20 mind or so and drizzle melted butter or ghee all over and contribute grilling. If using on a BBQ the timing may vary.</li> <li>Serve on the side or as your Sunday roast along with some basmati rice and raita. Putting it directly on the flesh of the chicken made sure we could taste the flavours through the entire chicken. I barbecued the whole chicken with indirect heat and kept the skin separately and some extra marinade to crisp up at the end! The chickpea added great texture. How did it gain popularity?</p> <p>A South Korean actor visited an eatery in Macau where he was served a similar beverage, which reminded him of "DALGONA" a type of Korean honeycomb toffee, who later presented in in Korean TV show under the hashtag #dalgonacoffeechallange then the homemade versions of this coffee started to emerge on South Korea's Youtube channels then went viral in Tik Tok ;)</p> <p><img alt="Dalgona Coffee" data-entity-type="file" data-entity-uuid="68390318-4ed6-41bd-9d21-478fd9250bd9" src="/sites/default/files/inline-images/IMG_5045.JPG" /></p> <p>Few tips to remember while making this coffee, I know it’s no rocket science and I won’t make it sound like one ;) but these tips are important and they are tried and tested -</p> <ol><li>Do not use ground coffee powder, it has to be instant coffee granules, it’s only insta coffee that makes that whipped texture which ground coffee won’t.</li> <li>Use hot water this will help the instant coffee granules to dissolve.</li> <li>While drinking this coffee (in my experience) was a bit too sweet for my taste buds, since the whipped cream like coffee is with sugar and it stays on top. (Skip this if using powdered ginger and garlic, you can add it along with the rest of the spices)</li> <li>Add the chopped tinned tomatoes, let the tomatoes cook for about 5 mins, add all the spices, stir well and let it cook for another 2 to 3 mins.</li> <li>Open the kidney beans tin and reserve the water separately in a bowl, add the kidney beans into the pan and combine well. Cover and cook for another 2 mins.</li> <li>If the gravy has reduced, add some of the reserved water from the tin.</li> <li>Serve with cooked basmati rice, garnish with freshly chopped coriander leaves. Now heat the oil or ghee in a non stick pan, fry the meatballs for about 5 minutes until nicely browned on all sides, set aside. </li> <li>In the same pan add the rest of the ghee or oil then toss in the the shallots and saute and for 3 to 5 minutes.</li> <li>Add the tomatoes and fry for about 5 mins, until soft. Add the tomato puree and spices and mix well, saute for another 2 mins.</li> <li>Add the meatballs in and mix well, add water and cover and let it simmer for about 10 mins on low heat. If the gravy becomes thick at this stage, add some more water.</li> <li>Add the cream and give everything a good mix, turn off the heat and let it simmer for a few seconds. Remove from heat immediately.</li> <li>Garnish with coriander and serve with cooked basmati rice or naan. Bake in pre-heated oven for 18 to 20 minutes. It was after I met my hometown friend who gave me the recipe and I tried it for the first time and it was absolutely delicious! I ate not one, not two but like three of them! Not even complaining or guilty ;) My Polish husband enjoyed it too, he ate it the traditional way by hands :D</p> <p><img alt="Masala Dosa" data-entity-type="file" data-entity-uuid="65f689d3-4b38-43f4-80af-0d3c7bb4d6a8" src="/sites/default/files/inline-images/IMG_9644-2.jpg" /></p> <p>Dosa for my non-indian friends is something like pancakes, but the difference between the two is a dosa batter is fermented (without yeast) overnight. It is a mix of lentils and rice.</p> <p>In south India we enjoy our dosas in many different ways, there is plain ones, butter ones, soft ones and the crispy one and then there is Masala Dosa which is the one with potatoes stuffed inside, which I think makes it the king of all Dosas ;)</p> <p><img alt="Masala Dosa" data-entity-type="file" data-entity-uuid="c42a41c6-7c9d-433a-ad1d-1b8a091ef59d" src="/sites/default/files/inline-images/IMG_9659-2.jpg" /></p> <p>I was hesitant to even try it all this while thinking that I might not make it right, it is one such dish which for me has to be perfect otherwise it doesn’t taste like it should. But when I finally decided to give it a try and it turned out so good I have already made it few times now!</p> <p><img alt="Masala dosa" data-entity-type="file" data-entity-uuid="eae4caf5-e838-4a7b-bbde-1ff49b56cf63" src="/sites/default/files/inline-images/IMG_9669-3.jpg" /></p> <p>There are few key tip consider when making a dosa batter -</p> <ol><li>Weather conditions - in winter the batter might not rise as it is supposed to, unlike summer when the weather is warmer. So you have to keep in mind the time required for it to ferment. I got a tip from my friend who gave me the recipe, to pre-heat the oven and turn it off when it warm and to leave the batter inside the warm oven overnight so the fermentation is better during winter.</li> <li>I usually soak the rice and lentils in the morning and grind it in the evening and let it sit overnight in the kitchen and it is ready the next day.</li> <li>The quality of the rice - I use basmati rice, but it could be any other rice too. I would prefer using basmati which is easily available for me here in any supermarket.</li> <li>The pan - use a good quality non stick pan, remember the art of making dosa comes with practice. The more you do the better you get at it. So keep practicing ;)</li> <li>Use the same cup to measure all the ingredients. </li> </ol><p>Serve the dosa with any of your favourite coconut chutney. Soo delicious! Pour the mixture into a large bowl, cover and let it sit in the kitchen counter overnight for fermentation.</li> <li>To make the dosa heat few drops of ghee in a nonstick pan, take about one big laddle of the batter and pour at the center and move in circular motion and spread it around (Similar to crepes). Add a small tsp of ghee around and let it cook on medium low heat. Repeat for the rest. (See tips above on how to get the perfect batter).</li> </ol><p> </p> <p>For the potato filling - </p> <ol><li>Wash, peel and boil the potatoes, do not over boil them. set aside.</li> <li>Heat oil or ghee in a pan add the mustard seeds, black gram lentils , curry leaves and let it  sizzle and splatter. Add the onion, saute for two mins until translucent. </li> <li>Add the boiled potatoes and rest of the spices, salt and add the water, stir well. Mash the potatoes with the spatula a little (do not over mash it). Garnish with chopped fresh corriander. </li> </ol><p> </p> <p>To serve the dosa - </p> <p>Add the potato mixture about 2 tablespoons of it inside the dosa, serve with coconut chutney. It’s when Autumn has just begun, you feel the cold in the air and then there is sudden warm days again. We are currently experiencing those beautiful warm days again and I absolutely love it.</p> <p><img alt="Masala King prawns salad wirh cherries " data-entity-type="file" data-entity-uuid="b4f98285-360a-471a-a3a2-710d9654e433" src="/sites/default/files/inline-images/IMG_0517.JPG" /></p> <p>The sky is the bluest of blue.. and like my little boy says ‘clear blue skies with little patches of clouds, just the way I like it’ :) and trust me it’s so beautiful.</p> <p>Keeping the warm weather in mind I have the perfect salad recipe for you. It can be enjoyed warm as well, enjoy it on it own as a light lunch or light dinner or even as a side. Once the prawns are cooled down add into the bowl and gently mix it. Serve right away.
